Ingredients for 4 servings:
- 4 pork chops
- salt and pepper
- 2 tbsp clarified butter
- 150 g ham
- 100 g onion(s)
- ½ bunch parsley
- 250 g cheese (Gouda)
- 1 egg(s)
- 500 g potatoes, small
- olive oil
- 1 sprig(s) rosemary
- 350 g cherry tomatoes
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Preheat the oven to 180°C (160°C fan-assisted oven). Pat the chops dry and flatten slightly. Season with salt and pepper. Brown them vigorously on both sides in clarified butter. Remove and keep warm. Cut the ham into small cubes and fry in the frying fat. Finely dice the onions, add to the pan, and sauté until translucent. Remove from the pan and let cool. Rinse the parsley, shake dry, and chop. Grate the cheese. Mix the ham, onions, egg, parsley, and cheese and spread on the chops. Bake the chops in the oven for 5-10 minutes. Meanwhile, wash the potatoes, cover, and fry in plenty of oil with the rosemary for about 15 minutes. Remove the rosemary, add the tomatoes, and fry for about 5 minutes. Season with sea salt, if desired. Drain the potatoes and serve with the chops. Green salad goes well with it.
