Ingredients for 1 servings:
- 280 g wheat flour
- 2 tsp baking powder
- 1 pinch of salt
- 1 packet of vanilla sugar
- 100 g brown sugar
- 1 pinch(s) cinnamon powder
- 3 banana(s), ripe
- 170 g oil, neutral
- 200 g dark chocolate chips
- 2 tbsp maple syrup
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes
Preheat the oven to 180°C (top/bottom heat). Line a 25 cm loaf pan with baking paper. In a large bowl, combine the flour, baking powder, salt, vanilla sugar, brown sugar, and cinnamon. Mash two bananas and add the oil. Mix everything thoroughly. Add the banana-oil mixture to the flour mixture and mix until just combined. Fold the chocolate chips into the batter and pour the batter into the baking pan. Peel the third banana and cut it in half lengthwise. Place it cut-side up on the batter, press down lightly, and brush with maple syrup. Bake on the middle rack for 55-60 minutes until golden brown. Remove from the oven and let cool for a few minutes. Then remove from the pan and let cool completely on a wire rack.
