Zucchini and Salmon Frittata

Ingredients for 2 servings:

  • 250 g zucchini
  • 100 g smoked salmon
  • 4 eggs
  • 100 ml milk powder
  • 2 spring onions or shallots
  • 1 portion of fresh parsley
  • 1 pinch(s) of salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

low carb, quick and easy

Cut the zucchini into strips and sauté with the onions for 3 minutes. Whisk the milk and eggs with salt, pepper, and parsley. Place the vegetables in a casserole dish and pour over the milk and egg mixture. Cut the salmon into pieces and stir in the salmon pieces. Then bake for about 30 minutes at 200°C (top/bottom heat).
