Ingredients for 2 servings:
- 1 onion(s), red
- 2 bell peppers, red
- 200 g cherry tomatoes
- 5 eggs
- 250 g feta cheese
- 2 tbsp tomato paste
- some olive oil or butter
- some oregano
- some lavender flowers, dried
- some salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Dice the onion and bell peppers, and halve the tomatoes. Heat a little olive oil or butter in a pan and sauté the onions. Add the tomato paste, stir, and fry lightly. Add the diced bell peppers and tomatoes and sauté briefly. Season with oregano, lavender blossoms, salt, and pepper, then transfer to a bowl. Crack the eggs into the pan, let them set slightly, add the vegetables, and mix everything together. Crumble the feta cheese over the pan. Cover the pan with a lid or some aluminum foil and let the feta cheese melt. Since feta cheese is salty, be a little more sparing with the salt and add more seasoning if desired. Any type of bread goes well with this dish.
