Red lentil cream soup

Ingredients for 4 servings:

  • 100 g lentils, red
  • 300 ml water
  • 1 tbsp butter
  • 1 tbsp flour
  • 500 ml vegetable stock
  • 2 tbsp soup vegetables, salted (paste)
  • 1 dash of cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Bring the lentils to a boil with 300 ml of water and simmer for 10 minutes. Season the lentils after 10 minutes of cooking, as otherwise the cooking time will be longer. You can add a few lentils after 2 minutes of cooking. This way, they won’t overcook completely and will still have a bit of a bite. In the meantime, make a roux with the butter and flour. Deglaze with the vegetable stock. Add the lentils. Add the remaining ingredients and seasonings. Simmer for 3 minutes and season to taste. Serve garnished with parsley, if desired.
