Broccoli and cheese nuggets

Ingredients for 4 servings:

  • 800 g broccoli or vegetable mix, frozen
  • 2 eggs
  • 100 g Parmesan, freshly grated or other grated cheese
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 26 minutes; Total time approx. 36 minutes

Cook the broccoli or frozen vegetable mix in boiling water for a few minutes. Then drain the vegetables and chop them in a food processor until they are roughly rice-sized. Mix them with the cheese and eggs and season. Using two spoons, form the mixture into small balls or nuggets and place them on a baking sheet. Bake the balls at 180 degrees Celsius (350 degrees Fahrenheit) until they are lightly browned, then carefully turn them over and cook on the other side. It took me about 8 minutes per side to bake. You can also make the balls with fresh vegetables—for example, cauliflower, carrots, and anything with a fairly firm and “dry” consistency are suitable—or use another grated cheese, such as Gouda, instead of Parmesan. The vegetable balls are a great side dish for meat and a great way to introduce children to even unpopular vegetables.
