Creamy spelt vegetable pan

Ingredients for 2 servings:

  • 100 g spelt like rice
  • salt water
  • 2 bell peppers, green and yellow
  • 1 small zucchini
  • 1 stalk(s) spring onion(s)
  • 1 clove(s) garlic
  • 60 g cream cheese, e.g. paprika pepper
  • salt and pepper
  • 100 g cherry tomatoes
  • some water

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Cook the spelt in twice the amount of salted water. Meanwhile, dice the bell peppers and zucchini. Thinly slice the spring onions. Crush the garlic into the vegetables. Sauté the vegetables in a pan with a little water. When the vegetables are tender, add the cream cheese and let it melt. If the sauce isn’t thick enough, add a little more water. Season with salt and pepper. Halve the cherry tomatoes and stir into the hot sauce. Do not return to a boil. Serve the sauce with the spelt.
