Ingredients for 1 servings:

  • 125 g margarine
  • 175 g sugar
  • 1 packet of vanilla sugar
  • 3 eggs
  • ½ lemon(s), zest grated
  • 1 pinch of salt
  • 500 g flour
  • 3 tsp baking powder
  • 200 ml milk
  • 1 tbsp rum
  • 250 g powdered sugar
  • 3 tbsp water, hot

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cream the butter, sugar, and vanilla sugar until fluffy, then stir in the eggs. Add the salt and lemon zest. Make sure the lemon isn’t splattered. Mix the flour and baking powder and add alternately with the milk. The batter shouldn’t be too runny, and only add the rum if no children are eating. Place 2 tablespoons of the batter on a baking tray lined with baking paper. Bake at 180 degrees Celsius for 15 to 20 minutes. Then let it cool completely. Mix the icing sugar with water until smooth and spread it on the flat side of the American cookies. The icing shouldn’t be too runny, or it will all run off. For children, you can also stir a little cocoa into the icing sugar and coat the American cookies half white and half brown. Or pipe faces on with food coloring.
