Ingredients for 1 servings:

  • 550 g dried fruit
  • 125 g hazelnuts
  • 100 g walnuts
  • 3 eggs
  • 125 g sugar
  • 125 g flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • possibly rum, for soaking the cranberries/raisins

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 1 hour 40 minutes

Cut the dried fruit (e.g. 200g figs, 200g apricots, 150g soaked cranberries/raisins) into strips or cubes to taste. Chop the hazelnuts and walnuts (coarsely or finely, whichever you prefer). Beat the eggs with the sugar until frothy. Mix the flour, cinnamon, and baking powder and stir briefly. Add the dried fruit and nuts. Bake in a loaf pan at 150°C for approx. 70-90 minutes (use a skewer to check if it’s cooked through!). After baking, let it cool in the pan for approx. 15 minutes. You can use whatever dried fruit you like. To use up leftovers, you can of course use more than just three different types of dried fruit. Just keep an eye on the total weight of 550g. I have also added candied strawberries and cherries. Since these fruits are already sweetened, the amount of sugar should then be reduced to 90g. If you like, you can soak the cranberries or raisins in rum. And for those who only eat cinnamon during the Christmas season, simply leave it out and you’ll be able to enjoy it the rest of the year!
