Seeded fruit wafers

Ingredients for 1 servings:

  • 125 g butter
  • 250 g oat flakes, wholegrain
  • 150 g dried fruit
  • 40 g sunflower seeds
  • 40 g almonds, chopped
  • 20 g sesame seeds
  • 2 m.-sized eggs
  • 50 g sugar
  • ½ tsp baking powder
  • 1 tsp, heaped vanilla sugar
  • 1 package of wafers, 5cm diameter
  • 1 pack of cherries, (slicing cherries)

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes

Heat the butter until melted, then add the oats and let cool. Cut the dried fruit (whichever you prefer), including raisins, candied lemon peel, or candied orange peel, into small cubes. Lightly toast the almonds, sesame seeds, and sunflower seeds in a hot, dry pan. In a large bowl, whisk together the eggs, sugar, baking powder, and vanilla sugar. Add the oats and dried fruit and mix well. Place a heaped teaspoon onto each wafer and press down lightly (you can also use 2 teaspoons to make small heaps on baking paper). Finally, quarter the cherries, place a piece on each cookie, and press down lightly. Bake the cookies on the middle rack at 150°C (300°F) for about 15 minutes.
