Chicken gratin with peaches

Ingredients for 2 servings:

  • 1 tbsp oil
  • 150 g rice (long grain rice)
  • 250 ml water
  • 3 tsp vegetable broth, instant
  • 1 onion(s)
  • 1 can peach(s)
  • 200 ml cream
  • 400 g chicken breast fillet(s)
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Heat the oil. Sauté the rice for about 5 minutes until translucent. Add the water and vegetable stock, bring to a boil, and simmer over low heat for about 20 minutes. Cut the chicken breast fillet into strips about 1 cm wide, sear briskly, and season with salt, pepper, and paprika. Finely chop the onions, add them to the meat, and fry. Drain the peaches, reserving the juice. Chop the fruit, then add 100 ml of the juice and the cream to the meat. Place the rice in a greased baking dish and spread the peaches and meat on top. Bake the whole thing for about 20 minutes at 175°C (fan oven).
