Ingredients for 1 servings:

  • 125 g butter
  • 80 g brown sugar
  • 80 g sugar, white
  • 200 g spelt flour
  • 1 pack of pudding powder, vanilla
  • 1 egg(s)
  • 100 g peanut butter
  • 4 tbsp honey (liquid, but cold)
  • 2 tbsp peanut butter

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cream together softened butter, egg, and sugar. Stir in the flour, pudding mix, and peanut butter. Scoop out the dough with a teaspoon and shape into small balls (approx. 1.5 cm). Place on a baking sheet lined with baking paper. Flatten slightly with a fork. Bake in a preheated oven at 160°C for about 5-8 minutes (depending on the size). You can also pipe this batter (it’s a bit thick, but these dots look nice too). Assemble the cold biscuits by whisking the peanut butter and honey until smooth.
