Baked pork loin steak with apple cream sauce

Ingredients for 4 servings:

  • 4 pork steak(s) from the back
  • 4 slices of cooked ham
  • 4 anchovy fillets
  • 4 pinches of pepper
  • 2 slice(s) cheese, spicier, halved
  • 4 tomato slices
  • 4 tbsp, heaped Manchego, grated or Parmesan
  • 2 garlic cloves, finely chopped
  • 2 shallots, finely chopped
  • 200 ml vegetable stock
  • ¼ apple, peeled
  • 1 cup of cream, approx. 200 g
  • 200 ml Calvados
  • 250 ml white wine
  • 3 rosemary needles
  • 1 sprig(s) lovage

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Season the meat with pepper and top with ham and anchovy fillets. Sear the steaks on the underside in a pan for 3 minutes. Set the meat aside. For the sauce, sauté the shallots in oil, add the garlic, and deglaze with half of the Calavados. Reduce the Calavados. Add the chopped apple and white wine and reduce again. Once the apple has melted, add the remaining Calavados and top up with the cream and vegetable stock. Add the herbs. Reduce the sauce. Top the steaks with the cheese and a slice of tomato and grill using top heat. If the tomato starts to dry out, sprinkle it with grated Manchego and grill again until the cheese is golden brown. Serve the steaks with the sauce, gnocchi, and fresh spinach.
