Potato, carrot and kohlrabi soup à la Didi

Ingredients for 6 servings:

  • 200 g carrot(s)
  • 350 g kohlrabi, frozen, diced
  • 300 g potatoes
  • 1,200 ml beef broth
  • 400 ml cream
  • 6 Bockwurst
  • 200 ml crème fraîche
  • 2 tbsp rapeseed oil

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes

Peel the carrots and potatoes and dice them roughly. Add 2 tablespoons of rapeseed oil to the blender. Add the carrots, kohlrabi, and potatoes. Turn on the blender and select the “Soup” program. Sauté the vegetables for 10 minutes, then add the beef broth. Add the cream about 5 minutes before the end. Heat the sausages, place one in each soup bowl, and pour the soup over them. Serve with crème fraîche in a small bowl, adding a dollop to the soup if desired. Plate up and serve.
