Terlan wine soup

Ingredients for 4 servings:

  • ½ liter beef broth, strong
  • 150 ml white wine (Terlaner or another dry Pinot Blanc)
  • 150 ml whipped cream
  • 3 egg yolks
  • Salt and pepper, white
  • Cinnamon
  • 1 roll, stale, diced
  • butter

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Very good!

Bring the beef broth and wine to a boil in a saucepan. Remove from the heat, stir in the heavy cream and egg yolk, and season with salt, pepper, and cinnamon. Return the soup to the stovetop, but at very low heat (the egg will curdle as soon as the soup boils), whisking until the soup reaches a creamy consistency. Meanwhile, toast the bread cubes in hot butter in a pan until crispy. Ladle the finished wine broth into warmed soup bowls, scatter the crusty bread cubes on top, sprinkle with more cinnamon, and serve immediately.
