Tyrolean garlic soup

Ingredients for 4 servings:

  • 40 g butter
  • 500 ml beef broth
  • 60 g garlic, chopped
  • 50 g flour
  • 500 ml milk
  • 4 tbsp cream
  • 1 tbsp parsley, chopped
  • 1 medium-sized onion(s), chopped
  • 3 cloves garlic, sliced
  • some salt and pepper
  • nutmeg
  • 3 slices of white bread

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Brown the onions in hot fat, dust with flour, and add broth and milk. Simmer for 10 minutes, add garlic and spices, and simmer for another 5-10 minutes. Finish with the lightly whipped cream. Cut the white bread into cubes and toast them in the hot pan with the garlic slices until golden brown croutons form. Pour over the soup and serve.
