Ingredients for 2 servings:
- 50 g shallot(s), sliced
- some butter
- 100 g wild garlic, chopped
- 100 ml white wine
- ½ liter chicken broth
- ⅛ liter whipped cream or sour cream
- Salt
- Pepper, white
- Parmesan
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Sauté the shallots in butter, add the wild garlic, and sauté gently. Deglaze with white wine and pour in the chicken broth. Simmer gently for about 15 minutes. Add cream, season, purée finely, and reheat. Garnish the soup with whipped cream, sprinkle with Parmesan cheese, and serve.
