Ingredients for 5 servings:
- 100 g wild garlic
- 1 potato(s), floury
- 2 onions
- butter
- 500 ml meat broth or vegetable broth
- 250 ml cream
- salt and pepper
- 1 dashes lemon juice
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Finely chop the onions, dice the potatoes, and sauté briefly in hot butter. Pour in the broth and simmer for 10 minutes. Blend thoroughly with a hand blender and pass through a sieve. Briefly blanch the wild garlic and immediately add it to iced water. Blend the wild garlic into the soup, top up with the cream, add a squeeze of lemon juice, and, if available, add more volume with a wand (slice). Tip: Sauté the wild garlic with the onions, but this will make the soup gray.
