Ingredients for 6 servings:
- 400 g potatoes
- 1 onion(s)
- 30 g butter
- 1 liter vegetable broth
- 500 g beans (broken)
- 200 ml cream
- 150 g bacon, diced
- Salt
- pepper
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Sauté the diced onions in butter in a saucepan. Then add the diced potatoes. Pour in the vegetable stock and simmer, covered, for about 15 minutes. Wash and trim the beans (canned beans work well too) and cut into small pieces. Puree the potatoes in the stock and pour in the cream. Add the beans and simmer gently for 15 minutes. Season with salt and pepper. Finally, dice the bacon, fry, and sprinkle it over the soup.
