Marinated spring onions

Ingredients for 3 servings:

  • 2 bunch spring onions, cleaned
  • 1 tbsp vinegar (wine)
  • 1 tsp mustard (Dijon)
  • 50 ml oil
  • 1 garlic clove(s), squeezed
  • 2 tbsp chopped parsley, chervil or coriander
  • Salt and pepper, black

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Vegetarian

Blanch the spring onions in salted water; they should remain crisp. Drain in a colander. Combine the vinegar, oil, and mustard. Add salt, pepper, garlic, and herbs. Pour the mixture over the still-warm spring onions and let them stand for at least 15 minutes, preferably longer. Tip: Use shallots, spring onions, or tender leeks instead of the spring onions.
