Ingredients for 3 servings:
- 2 bunch spring onions, cleaned
- 1 tbsp vinegar (wine)
- 1 tsp mustard (Dijon)
- 50 ml oil
- 1 garlic clove(s), squeezed
- 2 tbsp chopped parsley, chervil or coriander
- Salt and pepper, black

Vegetarian
Blanch the spring onions in salted water; they should remain crisp. Drain in a colander. Combine the vinegar, oil, and mustard. Add salt, pepper, garlic, and herbs. Pour the mixture over the still-warm spring onions and let them stand for at least 15 minutes, preferably longer. Tip: Use shallots, spring onions, or tender leeks instead of the spring onions.
