Coconut-orange-chocolate meringue

Ingredients for 8 servings:

  • 4 egg whites
  • 200 g sugar
  • 75 g powdered sugar
  • 100 g desiccated coconut
  • Orange flavor
  • 100 g chocolate coating

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 40 minutes

Preheat the oven to 110 degrees Celsius (fan/convection oven). Mix 75g of sugar with 75g of icing sugar and set aside. Beat the egg whites in a wide, large bowl until semi-stiff, then slowly add 125g of sugar and continue beating until stiff peaks form. Sift the icing sugar mixture over the mixture and carefully fold it in. Then fold in the desiccated coconut and 4 drops of orange baking flavoring. Place the mixture in a piping bag and pipe small towers onto two baking sheets lined with baking paper. Place in the oven and bake for 70 minutes. The meringues are ready when they sit loosely on the paper and can be easily moved around. Allow to cool, then melt the chocolate coating and briefly dip the meringues, pointy-side down. They will keep in a dry, airtight container for several weeks.
