Oatmeal cookies with chocolate icing

Ingredients for 1 servings:

  • 300 g oat flakes
  • 180 g sugar
  • 2 eggs
  • 2 tsp baking powder
  • 2 packets of vanilla sugar
  • 100 g flour
  • 250 g almond(s), ground
  • 250 g butter
  • 200 g couverture (milk chocolate)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Gradually add the oats, sugar, eggs, baking powder, vanilla sugar, flour, and almonds to a large mixing bowl and mix. Heat the butter in a double boiler (or in the microwave) and add it to the remaining ingredients. Blend everything thoroughly with a mixer until smooth. Then, using your hands, form walnut-sized balls, place them on a baking sheet lined with baking paper, and press them down lightly. Bake in a preheated oven at 150°C (convection oven) for about 20 minutes. Allow the cookies to cool on a wire rack, then cover half of them with the melted chocolate coating.
