- 150 g cashew nuts
- 250 g flour
- ¼ tsp salt
- 230 g butter
- 60 g powdered sugar, sifted
- ½ tsp vanilla extract
- 190 g icing sugar, sieved, for rolling

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Roast the cashews on a baking sheet for about 10 minutes. They should turn light brown. Let the nuts cool. Grind the cashews with a hand blender or in a blender. Then make a dough from the nut mixture, flour, butter, vanilla extract, and powdered sugar. Wrap it in foil and chill for about 1 hour. Pour the powdered sugar into a bowl. Preheat the oven to 160 degrees Celsius (320 degrees Fahrenheit). Form the dough into small balls. It’s best to use a coffee scoop. Line a baking sheet with parchment paper and place the balls on top. Bake the cookies for about 20-25 minutes. They should be firm on the outside but not brown. Let the balls cool for 1-2 minutes and then roll them in powdered sugar.
