Ingredients for 1 servings:
- 300 g wheat flour
- 1 ½ tsp baking powder
- 130 g sugar
- 1 packet of vanilla sugar
- 170 g butter, soft
- 1 m.-sized eggs
- 1 medium egg yolk
- 100 g apple rings, dried
- 4 tbsp Calvados or apple juice
- 3 tbsp jelly (apple jelly)
- ½ tsp cinnamon powder
- 5 m.-large egg whites
- 300 g desiccated coconut
- 200 g sugar
- 2 tsp cornstarch
- 200 g chocolate, dark
- 2 tsp oil

Working time approx. 40 minutes; Total time approx. 40 minutes
makes about 75 pieces
Preheat oven to 170°C. Dough: Mix flour with baking powder. Add the remaining ingredients and mix everything with a mixer. Spread the dough on the baking sheet and press it evenly into a base. Place the sheet on the middle rack of the oven for about 10 minutes and pre-bake the base. Let the base cool on a wire rack. Topping: Cut apple rings into very fine pieces and soak them in Calvados or apple juice (preferably overnight). Mix the apple jelly with cinnamon and spread it on the base. Place the egg whites, desiccated coconut, sugar, and cornstarch in a mixing bowl and mix with a mixer on high for about 2 minutes until smooth. Fold in the diced apple and spread the mixture on the dough. Return the sheet to the oven. Baking time: about 25 minutes. Let the pastry cool on the sheet on a wire rack (preferably overnight). Decoration: Cut the pastry into small diamonds (about 4 x 3 cm) or triangles. Melt the chocolate with oil in a water bath over low heat and stir until smooth. Dip the tips of the pastries in the chocolate and let them set on baking paper.
