The special cookie cutters – gluten-free, fructose-free and definitely healthier.
Cream the softened butter with the sugar and eggs until fluffy. Combine the flours with the remaining dry ingredients and add them a little at a time. Finally, add the oil and knead everything into a smooth dough. Refrigerate the dough for about 3 hours. The cold dough makes a wonderful cookie cutter. Roll it out on a floured surface to about 0.5 cm thick and cut out shapes as desired. Christmas trees go very well with the color of the raw dough. If you’re short on time, you can also roll the dough into logs and cut evenly thick slices. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) and bake the cookies for 15 minutes, until they begin to turn light brown. The finished, cooled cookies can also be garnished with icing, etc. These cookies, of course, don’t have an intoxicating effect—they make you happy because they’re cookies.
