Ingredients for 4 servings:
- 400 g chicken breast fillet(s)
- 50 ml soy sauce, preferably pure
- 2 tbsp honey, spicy (thyme honey is best)
- 200 ml sesame oil, from roasted seeds
- some cayenne pepper

Clean the chicken breast fillets thoroughly, remove all tendons, and cut into thin strips about 5 cm long. In a bowl, whisk the honey, soy sauce, and cayenne pepper together, and keep the bowl ready. Keep a double layer of paper towels next to the stove. Heat the sesame oil thoroughly in a large pan. Now add the chicken pieces in batches to the fat. When they’re a nice golden brown, drain briefly on paper towels and add them to the soy and honey mixture while still hot. Don’t add too much chicken to the pan at once—it shouldn’t start to boil. Once the pieces are nicely marinated, you can add them cold to a salad, top a sandwich, or eat them straight from the bowl with your fingers. The broth is delicious. But they’re best as an ingredient in a spicy lentil dish.
