Tyrolean grey cheese soup

Ingredients for 4 servings:

  • 2 tbsp butter
  • 1 shallot(s)
  • 150 ml cream
  • 200 g cheese (grey cheese)
  • 30 g flour
  • 1 liter of soup (vegetable or beef soup)
  • salt and pepper
  • Caraway seeds
  • Parsley
  • Black bread

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Hearty Tyrolean soup, exclusively for the cold season

Sauté the finely chopped shallot in butter. Dust with flour, pour it into the soup, bring to a boil, and simmer for about 5 minutes. Stir in the whipped cream and the Graukäse (grey cheese) and simmer for about another 10 minutes, until the Graukäse (grey cheese) has melted. Stir the soup thoroughly and season with salt, pepper, and caraway seeds. Toast thin slices of black bread. Ladle the delicious Tyrolean Graukäse (grey cheese) soup into soup bowls, garnished with the toasted black bread and fresh parsley, and serve hot.
