Raw asparagus salad

Ingredients for 4 servings:

  • 2 egg yolks
  • Salt
  • pepper
  • 1 pinch(s) of sugar
  • 250 ml olive oil
  • 4 tbsp lemon juice
  • 5 tbsp herbs, mixed, chopped
  • 500 g asparagus, fresh

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Whisk the egg yolks with salt, pepper, and sugar. Add the oil drop by drop and whisk everything into a thick mayonnaise. Stir in the lemon juice and fold in the washed, finely chopped herbs. Peel the asparagus and cut into approximately 1/2 cm thick slices. Immediately fold into the mayonnaise and refrigerate until ready to serve.
