Apple-cranberry crumble

Ingredients for 4 servings:

  • 2 apples, each just under 200 g
  • 1 piece(s) ginger, approx. 1 cm
  • 25 g cranberries, dried
  • 60 g butter (for the vegan version: margarine)
  • 2 tbsp lemon juice
  • 3 tbsp honey (for the vegan version: maple syrup)
  • 50 g oat flakes, wholegrain
  • 35 g chopped nuts (e.g. hazelnuts, walnuts…)
  • some cinnamon as needed

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

vegetarian, also vegan possible

Preheat the oven to 200 degrees Celsius (top and bottom heat). Quarter the apples, remove the cores, cut the quarters into small cubes, and immediately toss with the lemon juice. Peel and finely grate the ginger. Roughly chop the cranberries and toss with the ginger and apple pieces. Grease 4 ovenproof dishes (e.g., 200 ml cups) and fill with the apple mixture. Melt the butter or margarine over low heat, mix with the remaining ingredients to form crumbles, and spread evenly over the apple pieces. Bake the crumble on the middle rack for 20-25 minutes until crispy and brown. Tip: Every oven bakes differently! As a precaution, check the crumble after 20 minutes to make sure it doesn’t get too dark.
