Ukrainian Style Potato Dumplings with Wild Mushroom Filling

- 3 Pc. Peeled potatoes cooked
- 1 Pc. Potato freshly peeled
- 1 Egg
- 100 g Mushrooms fresh
- 1 Onion
- 100 g Diced Bacon
- 1 tbsp Sunflower oil
- Salt
- Clean the forest mushrooms and fry them with a little sunflower oil in a preheated pan. Add onion cubes and cook briefly at low temperature.
- Coarsely grate the boiled potatoes. Coarsely grate the raw potato and drain off the liquid from the potato. Add egg, flour and salt to the grated potatoes. Shape the dough into balls. Make a depression in the middle of the balls with your thumb. Fill the balls with the mushroom and onion mixture and form medium-sized dumplings. Let the dumplings soak in boiling salted water for 15 minutes.
- Cut the bacon into cubes and fry. Arrange the finished dumplings on a plate. Spread the bacon on top.
