Ingredients for 4 servings:
- 250 g tagliatelle, green
- 250 g mushrooms, brown
- 1 bunch of spring onions
- 1 bunch of basil
- 1 lemon(s), untreated
- 5 tbsp oil (rapeseed or olive oil)
- 2 tbsp soy sauce
- 2 tbsp peanut butter
- herbal salt
- pepper
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Grate the lemon zest and squeeze out the juice. Tear the basil leaves. Make a dressing with oil, lemon juice, soy sauce, peanut butter, and basil, and season with herb salt and pepper. Slice the mushrooms and spring onions and marinate them in the sauce. Cook the tagliatelle noodles according to the package instructions, mix with the mushrooms and spring onions, and let them sit for half an hour. Tip: The salad tastes best with fresh ingredients, of course, but if you have unexpected visitors or urgently need a delicious salad for another reason, canned mushrooms and dried basil are a viable emergency alternative.
