Goat cheese crêpes with cranberries and walnuts

Ingredients for 1 servings:

  • 4 pieces of crêpes or thin pancakes
  • 250 g goat’s cheese, creamy
  • possibly milk
  • 75 g cranberries, dried
  • 50 g walnuts
  • 2 spring onions
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Whisk the goat’s cheese with a little milk if necessary until creamier. Add the chopped cranberries and walnuts. Trim and wash the spring onions, pat dry, and finely dice them. Stir into the goat cheese mixture and season with salt and pepper. Spread the mixture onto the crêpes, roll them up, and refrigerate for about two hours, wrapped in foil. Slice before serving.
