Ingredients for 2 servings:
- 4 eggs
- 1 stalk(s) leek
- 1 red bell pepper(s)
- 1 garlic clove(s)
- Salt
- Pepper, freshly ground
- rosemary
- Thyme
- oil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Wash and dry the leek, and slice into thin rings. Wash and dry the bell pepper, removing any white matter. Then cut into small cubes. Peel the garlic clove. Whisk the eggs together with the spices and herbs. Add the garlic through a press to the eggs and mix everything together well. Heat the oil in a pan. Saute the leek and bell pepper for a few minutes. Then add the egg mixture and let it set, stirring constantly. It’s done.
