quick breakfast, traditional Ukrainian cuisine
Cut the salo into approximately 4-5 mm thick slices. Place in the hot pan and fry until translucent on both sides. Add the sliced onions, season with salt and pepper. Crack two eggs into the slices. Turn off the heat, cover the pan, and let stand on the hot plate for about 2 minutes. Sprinkle with chives and serve. Note: Salo is used in many different ways in Ukrainian cuisine—raw, salted, fried, or smoked. Salo is the most traditional, popular, and highly valued food in Ukraine and is simply a cult.
