Ingredients for 2 servings:

  • 150 g flour
  • 500 ml soy milk (soy drink), alternatively rice or oat milk (sweetened)
  • 3 tbsp soy flour
  • 1 tbsp baking powder
  • 2 tbsp sugar, brown
  • 1 banana(s)
  • olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mash the banana with a fork. Mix the soy flour with the soy milk until well combined. Add the brown sugar, baking powder, flour, and banana puree and mix well. Heat a pan and add oil. Pour in the batter (about 0.5 cm thick). Cook until the edges are firm and slightly brown and the top is just slightly wet. Then turn the batter and tear it into pieces with a fork or spatula. Fry the pieces until golden brown, turning occasionally. Add a little more olive oil if desired. Serve with applesauce, agave syrup, or cinnamon and sugar.
