Vegan pancakes

Ingredients for 4 servings:

  • 200 g oat flakes
  • 600 ml plant-based drink
  • 300 g flour
  • 300 ml water
  • 2 pinches of salt
  • 4 g baking soda
  • 4 g baking powder
  • 2 packets of vanilla sugar (no vanillin)
  • 2 tbsp sugar
  • 1 tsp rapeseed oil per pancake for the pan

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

This recipe serves 4 hungry people. Combine the oats and plant-based milk in a blender. This will make the oats even finer. Then combine all ingredients in a blender or food processor. Let stand for 5 minutes to thicken. Stir briefly with a ladle. Cook in a small frying pan or pancake pan on the stovetop at low heat (e.g., 4/10). I used 40 ml of batter per pancake. This yields pancakes weighing approximately 60 g—a lot!
