Cyberlady's leek soup with bacon

Ingredients for 4 servings:

  • 2 stalk(s) leeks, large
  • 50 g bacon, streaky
  • 1 liter of water, hot
  • 2 cubes of stock
  • 60 g butter
  • 80 g flour
  • 1 liter of milk
  • salt and pepper
  • Parsley

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and trim the leeks, cut them into thin strips, and wash them briefly again. Finely dice the bacon, fry them, then add the leeks and sauté them. Add the water and stock cubes and cook for about 10 minutes. Melt the butter in a separate pot, add the flour, and cook while stirring (roux). Gradually add the milk to the roux while stirring. Add the stock and leeks while stirring, bring to a boil, season with salt and pepper, and garnish with parsley.
