Gruyère cheese soup

Ingredients for 4 servings:

  • 3 m.-sized onion(s)
  • 30 g butter
  • 750 ml meat broth, hot (e.g. from stock cubes)
  • 250 g potatoes, waxy
  • 1 egg yolk
  • 4 tbsp cream
  • 50 g cheese, grated Gruyère
  • salt and pepper

Peel and dice the onions, then sauté in butter until light yellow. Add the meat broth. Peel and wash the potatoes, dice them, and bring them to a boil in the broth. Strain the potatoes and broth through a sieve and return to the heat. Whisk the egg yolk and cream together to thin the soup. Add the cheese to a soup bowl. Pour the hot broth over the potatoes, stir, and season with salt and pepper.
