Ingredients for 4 servings:

  • 250 g corn flour
  • 100 g corn kernels
  • 250 ml buttermilk
  • 75 g flour
  • 1 egg(s)
  • 2 tsp baking powder
  • ½ tsp paprika powder
  • 1 tsp salt
  • 1 onion(s)
  • Oil (corn germ oil for baking)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

In a bowl, combine the corn kernels with the flour, cornmeal, baking powder, paprika, and salt. Beat the egg with the buttermilk, add the very finely chopped onion, and quickly mix it into the flour mixture. Heat a frying pan one-third full with corn oil. Carefully drop the batter into the hot oil, a tablespoon at a time, and cook for about 4 minutes, until the hush puppies are golden brown on the outside and fluffy on the inside. Serve with ketchup or other sauces.
