Lentil and sausage salad with honey and mustard sauce

Ingredients for 8 servings:

  • 500 g lentils, brown
  • 1 onion(s)
  • 6 tbsp oil
  • 500 g carrot(s)
  • 250 g meat sausage
  • 6 tbsp vinegar (wine vinegar)
  • salt and pepper
  • 2 tbsp honey, liquid
  • 4 tbsp mustard cream (Dijonnaise)
  • ½ bunch parsley

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Wash the lentils and drain. Peel and finely dice the onion. Sauté both in 2 tablespoons of hot oil for about 3 minutes. Add 3/4 liter of water and bring to a boil. Cover and simmer for 25-30 minutes. Peel, wash, and dice the carrots. After about 15 minutes, add to the lentils. Drain everything and let cool for at least 30 minutes. Cut the sausage into thin slices. Mix together the vinegar, salt, pepper, honey, and Dijonnaise. Slowly whisk in 4 tablespoons of oil. Fold everything into the lentils and let stand for at least 30 minutes. Serve the salad. Wash, chop, and sprinkle the parsley over the top.
