Cherry muffins with coconut streusel

Ingredients for 1 servings:

  • 250 g flour
  • 2 tsp, leveled baking powder
  • 125 g sugar
  • 2 eggs
  • 1 packet of vanilla sugar
  • 80 g butter, melted or margarine
  • 200 g sour cream or sour cream
  • 80 g dark chocolate, coarsely chopped
  • 500 g cherry(s), fresh or from the jar
  • 100 g flour
  • 50 g desiccated coconut, or coarse coconut chips
  • 75 g butter, soft
  • 75 g sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Place paper baking cups in the muffin tin and preheat the oven to 200°C (top and bottom heat) or 175°C (fan oven). Pit the fresh cherries. Drain the cherries well from the jar. Pat dry with kitchen paper if necessary. Mix the flour and baking powder well. In a second bowl, beat the egg and sugar until frothy and stir in the vanilla sugar, melted butter, and sour cream. Fold in the flour mixture and carefully add the cherries and chopped chocolate chips. Stir everything in quickly. For the crumble, knead the flour, sugar, cinnamon, coconut flakes, and butter into a crumbly dough. Pour the batter into the muffin tins, spread the crumble on the muffins, and bake for 25-30 minutes. When the muffins are golden brown, remove from the oven, let cool, and enjoy. This batch makes approximately 16 muffins; one muffin contains approximately 294 kcal.
