Apple cider cake

Ingredients for 1 servings:

  • 250 g wheat flour
  • 1 ½ tsp baking powder
  • 125 g sugar
  • 1 tbsp vanilla sugar
  • 1 egg(s)
  • 1 tbsp water
  • 125 g butter
  • 2 tbsp breadcrumbs
  • 1 kg apple
  • Cinnamon powder
  • 2 pts. vanilla pudding powder
  • 2 tbsp, heaped sugar (approx. 40 g)
  • 750 ml cider or wine
  • 1 packet of vanilla sugar
  • 500 ml whipped cream
  • 2 points cream stiffener
  • Cocoa powder for dusting

Instructions

Working time approx. 45 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 45 minutes

Make a dough from the flour, baking powder, sugar, vanilla sugar, egg, water, and butter and let it rest in the refrigerator for 1 hour. Then press the dough into a springform pan, forming a rim about 4 cm high. Sprinkle the dough with breadcrumbs. Peel and thinly slice the apples. Spread on the base and dust with cinnamon. Make a pudding from the pudding mix with apple cider, sugar, and vanilla sugar, and pour it over the apples while still hot. Bake the cake in a preheated oven at approximately 180°C (top/bottom heat) for about 60 minutes. After this time, turn off the oven, open the oven door, and let the cake stand in the open oven for another hour. Let it cool, then refrigerate overnight. The next day, whip the cream with the cream stabilizer until stiff peaks form and spread it on the cake, dusting with cocoa powder. Note: This cake takes a bit of work, but it’s a definite hit at any coffee party.
