Ingredients for 4 servings:
- 2 carrots
- 3 spring onions
- 100 g lentils, red
- 100 ml white wine
- 1 can tomatoes, chopped
- 2 tomatoes
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Cut the carrots into sticks or small pieces and sauté. Then finely chop the spring onions, add them to the carrots, and sauté. Wash the red lentils and add them. Deglaze the dish with 100-200 ml of white wine (depending on taste) and simmer for a while. Then add the chopped tomatoes and fresh tomatoes. Season with salt, oregano, basil, and broth to taste. Simmer for about 25 minutes, until the lentils are tender. Serve with spaghetti and Parmesan cheese.
