Smoked tofu Bolognese

Ingredients for 2 servings:

  • 1 carrot(s), finely diced
  • 2 stalk(s) celery, finely diced
  • 1 onion(s), finely diced
  • 1 garlic clove(s), finely diced
  • 200 g smoked tofu, crushed with a fork
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 can of chopped tomatoes, 400 ml
  • Water
  • salt and pepper
  • Agave syrup
  • chili flakes
  • basil
  • 2 tsp soy sauce, sweet (Ketjap Manis)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

super tasty with a lot of Bolognese mouthfeel

Heat the olive oil in a nonstick frying pan and fry the crushed smoked tofu until golden brown. Add all the vegetables and fry for 5 minutes. Clear a spot in the center of the pan and fry the tomato paste there. Add the contents of the tomato can and mix well. Fill the can with water and add this as well. Season to taste with the spices and soy sauce, adding salt. Simmer everything over low heat for 15 minutes and serve with noodles of your choice.
