Satay chicken curry

Ingredients for 3 servings:

  • 1 large onion(s)
  • 1 red chili pepper(s)
  • 600 g chicken breast
  • 1 ½ tsp salt
  • ½ tsp pepper
  • 3 tsp curry powder
  • 1 tsp paprika powder
  • ½ tsp coriander powder
  • ½ tsp turmeric
  • 3 tbsp vegetable oil
  • 2 tbsp peanut butter, crunchy
  • 200 ml coconut milk
  • 300 ml chicken broth
  • 1 tbsp ketjap manis
  • 1 tsp Sriracha sauce
  • 1 handful of peanuts

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Chicken breast cubes in peanut curry sauce

Peel and finely dice the onion. Trim and finely chop the chili pepper. Cut the chicken breast into bite-sized pieces and mix in a bowl with the spices, onion, chili, and vegetable oil. Let everything marinate for at least 30 minutes. Mix all the ingredients for the satay sauce together in a bowl. Fry the chicken breast cubes in a non-stick pan over medium heat, stirring occasionally. Then add the satay sauce and simmer for about 10 to 15 minutes, until the sauce reaches the desired consistency. Plate up the satay chicken curry and serve garnished with roasted peanuts. Serve with boiled rice.
