Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and slice the potatoes. Roughly chop the onion. Sauté the potatoes and onion in olive oil until the onion is translucent and the potatoes are cooked through. Beat the eggs in a bowl until frothy, then add the potatoes and onion, mixing well. Heat a little olive oil in a pan and fry the egg, potato, and onion mixture until golden brown on both sides.
