Brussels Sprout Moink Balls

Ingredients for 4 servings:

  • 12 Brussels sprouts – florets
  • salt water
  • 500 g minced meat
  • 2 tbsp spice mix (BBQ rub)
  • some nutmeg
  • 24 slices of bacon
  • Barbecue sauce
  • Smoking flour

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Clean the Brussels sprouts and cut a cross at the stem to ensure even cooking. Boil them in salted water until tender. Then set the florets aside and let them cool. Place the mince in a bowl and season with BBQ rub, knead thoroughly, and divide into 12 pieces. Season the Brussels sprouts with nutmeg and coat them with mince to form a closed ball. Wrap each ball in two slices of bacon. Smoke the balls for 5 minutes. Then cook in the oven at 180°C for 20 minutes. Brush with barbecue sauce and cook for another 5 minutes. Brush with barbecue sauce again and return to the oven for a final 5 minutes. A grill is, of course, more practical, like the ones the guys from “BBQ aus Rheinhessen” do. They came up with the idea, too. Simply brilliant!
