Ingredients for 12 servings:
- 3 eggs
- 1 pinch of salt
- 90 g sugar
- 1 packet of vanilla sugar (Bourbon)
- 50 g flour
- 25 g cornstarch
- 2 tsp gingerbread spice
- 300 g jelly (currant jelly)
- 200 g dark chocolate
- 250 g whipped cream
- 400 g marzipan – raw mass
- 200 g dark chocolate coating
- Food coloring, green
- Peanuts, red, candied
Instructions
Working time approx. 1 hour 25 minutes; Rest time approx. 3 hours; Total time approx. 4 hours 25 minutes
Separate the eggs, beat the egg whites with salt until stiff, gradually adding the sugar and vanilla sugar. Stir in the egg yolks. Sift the flour, starch, and spices and fold in. Line the bottom of a springform pan with baking paper, pour in the mixture and smooth it down. Bake at 200°C for 20 minutes. Allow to cool. Cook the jelly for 2 minutes, then cut the base in half horizontally. Return one base to the springform pan, spread the slightly cooled jelly on top, and place the second base on top. Chop and melt the chocolate, whip the cream until stiff, then quickly stir the chocolate into the cream and spread it on the base. Chill for about 1 hour. Dust the work surface with a little icing sugar and roll out 350g of marzipan onto it, the same size as the springform pan. Place it on the mousse and chill for 1 hour. Melt the chocolate coating and glaze the cake. Tint the remaining marzipan green, roll it out, and cut out leaves. Decorate the cake with the leaves and candied peanuts.
