Chicken and tofu skewers

Ingredients for 2 servings:

  • 200g tofu
  • 200 g chicken breast fillet(s)
  • 1 garlic clove(s)
  • 3 tbsp peanut butter
  • 1 tbsp curry paste, yellow
  • 2 tbsp teriyaki sauce
  • 1 tbsp maple syrup
  • 8 tbsp lime juice
  • 1 tbsp water
  • 50 g crème fraîche
  • salt and pepper
  • 4 cherry tomatoes
  • 2 tbsp olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

With maple syrup

1. Cut the tofu and chicken breast fillet into 2 cm cubes. Finely dice the garlic clove. Mix 1 tbsp peanut butter, yellow curry paste, teriyaki sauce, maple syrup, 2 tbsp lime juice, water, and garlic. Mix the tofu and chicken in a bowl with the marinade and let stand for 10-15 minutes. 2. Mix together 2 tbsp peanut butter, 6 tbsp lime juice, crème fraîche, salt, and pepper. 3. Thread the tofu, chicken, and cherry tomatoes alternately onto 4 wooden skewers. Heat olive oil in a large pan. Fry the skewers on all sides for 4-5 minutes. Serve with the peanut sauce. Per serving: 51 g protein, 42 g fat, 25 g carbohydrates = 710 kcal (2969 kJ)
