Pumpkin soup with its own flavor

Ingredients for 4 servings:

  • 600 g pumpkin flesh
  • 60 g butter
  • 1 onion(s)
  • 1 liter chicken broth (alternatively 400 ml vegetable broth and 600 ml meat broth)
  • 200 ml cream
  • e.g. salt and pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

First, roughly dice the pumpkin flesh. Peel and roughly chop the onion. Place both ingredients in a saucepan with the butter and sauté over low heat for about 10 minutes until soft. Add the broth and simmer for about 20-30 minutes, stirring occasionally. Remove the pan from the heat and puree using a hand blender (or a mixer). Return the mixture to the heat, add the cream, and bring back to a boil briefly. Season with salt and pepper to taste. Serve hot.
